Very Vanilla Pear Ginger Ice Cream

Who doesn't love ice cream? We know we do. Unfortunately, it's either packed with sugar, artificial sweeteners, or other junk we don't want! Yup! All that "healthy" ice cream you've been eating, isn't all that healthy for you! Enter Luxe and the Lady! With this amazing recipe, we're able to get our sweet tooth fix without any of the nasty stuff! It's made with Zevia too, but you probably already knew that!

 

Ingredients

  • 5 Bartlett pears
  • 1 whole vanilla bean
  • 1 can Zevia Ginger Ale
  • 1 tbsp pure vanilla extract
  • 1 tsp lemon juice
  • 4 egg yolks
  • 1/4 tsp coarse sea salt
  • 2 cups heavy cream
  • 1 cup whole milk
  • 13 tsp Stevia
  • toppings of your choice

Directions

  1. Peel, core, and chop pears
  2. Heat a saucepan to medium heat and cook pears, 2.5 tsp of the stevia, salt, and lemon juice for about 7 minutes
  3. Remove from heat, let cool (5 mins), and puree in a blender
  4. Strain pear puree into a bowl and set aside
  5. Heat another saucepan to medium heat
  6. Split vanilla bean lengthwise and scrape
  7. Boil cream and milk and stir in vanilla bean
  8. Cover and steep for 1 hour. Then remove bean
  9. Add egg yolks and remaining stevia (10.5 tsp) to a bowl and whisk. Slowly whisk in this mixture into the vanilla cream/milk mixture
  10. Heat combined mixture over medium heat and cook until thick (about 8 mins)
  11. Remove from heat and refrigerate for 15 minutes
  12. Stir pear mixture into custard and refrigerate overnight in an airtight container
  13. Mix in Zevia Ginger Ale and churn the mixture into an ice cream maker according to the instructions
  14. Either eat right away or freeze for 2+ hours to fully set
  15. Add whatever toppings you desire and enjoy!
