Zevia Orange Creamsicle Donuts

We put a unique twist on orange creamsicles. We decided to turn them into donuts with the help of our friend Luxe and the Lady. With no sugar added as always, you'll get the same taste you love with none of the junk.

Ingredients

Donuts 

  • donut molds 
  • 1 1/2 cups finely ground almond flour or almond meal 
  • 1/2 cup coconut flour
  •  1/4 tsp sea salt 2 tsp baking powder 
  • 1 1/2 tsp pure vanilla extract
  •  zest from 1 small orange 
  • 1 cup Zevia Orange soda 
  • 3 large eggs
  •  5 tbsp unsalted butter or coconut oil (melted) 
  • liquid stevia equivalent to 1-1 1/2 tsp sugar (optional, to taste) 

Whipped Coconut Cream

  •  1 can coconut cream or full fat coconut milk (refrigerated the night before)
  •  1/2 tsp pure vanilla extract 

Orange Yogurt Drizzle

  •  1/2 cup unsweetened yogurt of your choice
  •  2 tbsp Zevia Orange soda 
  • 1 tsp beet juice mixed with turmeric powder (for orange coloring) 

Tiger Decorations

  •  1/4 cup stevia sweetened chocolate chips 
  • 24 whole almonds

Directions

Donut 

  1. Preheat oven to 350°F. Grease baking pan with melted butter or coconut oil and set aside.
  2. In a medium mixing bowl, whisk together the almond flour, coconut flour, salt, and baking powder.
  3. In a small mixing bowl, whisk together the vanilla extract, orange zest, Zevia Orange soda, eggs, butter/coconut oil, and liquid stevia. Pour wet ingredients into the dry ingredients, and stir until combined.
  4. Using a piping bag or cut zip top bag, pipe the batter into the donut slots until about 3/4 full.
  5. Bake for 10 minutes, then let cool for 5 minutes before transferring to a cooling rack.
  6. While the donuts cool, make the toppings.

Whipped Coconut Cream 

  1. Chill the bowl of a stand or electric mixers and the whisk attachment in the freezer for 15 minutes.
  2. Remove the can of coconut cream from the refrigerator and scoop the solid part into the mixing bowl. Beat it on medium speed for about 2 minutes.
  3. Add in the vanilla and mix until fully incorporated. The coconut cream should be smooth and fluffy. Transfer to the refrigerator.

Orange Yogurt Drizzle

  1. In a small bowl, mix together the yogurt, Zevia Orange soda, and beet juice. Set aside.

Tiger Decorations

  1. Melt the chocolate chips in the microwave in 30 second increments, stirring in between.
  2. Let it cool and transfer to a piping bag or a cut zip top bag and pipe the yes and noses, with little triangles for stripes onto wax paper. Let harden.
  3. Just before serving, spread the coconut cream onto each donut with a knife. Insert an almond into both sides and cover with more whipped cream.
  4. Drizzle some orange yogurt drizzle over reach donut with a spoon.
  5. Carefully peel the chocolate decorations off of the wax paper and add to the top. You can add the orange slice as a garnish, if desired. Enjoy!
