Zevia Lemon Lime Bars

Get your dessert fix with none of the junk that comes with it. These Lemon Lime Bars from Heart of a Baker are not only sugar free, but also made with Zevia Lemon Lime with Bitters Mixer. What's not to love?

Ingredients

Shortbread Crust 

  • 1 cup all-purpose flour
  • 1/3 cup coconut oil (melted)
  • granulated stevia equivalent to 1/2 cup sugar

Lemon Lime Filling

  • zest and juice from 1 lemon zest and juice from 1 lime
  • 1 cup raw cashews (soaked for 4 hours & drained)
  • 1/2 cup Zevia Lemon Lime with Bitters Mixer
  • 1 tbsp vanilla extract
  • granulated stevia equivalent to 2/3 cup cane sugar
  • 1/4 cup coconut oil

Directions

Shortbread Crust

  1.  Preheat oven to 350°F. Line a 8x8 inch baking pan with parchment paper and lightly grease. Set aside.
  2.  In a medium bowl, whisk together all ingredients. Press into the bottom of the prepared pan.
  3.  Bake for 9-10 minutes, until crust turns a light golden brown and is solid to the touch. Set aside to make the filling. 

Lemon Lime Filling 

  1. Combine all ingredients in a blender and blend on high until smooth. Pour over baked crust. 
  2. Bake for 40-50 minutes, until filling only jiggles slightly and top is golden brown.
  3.  Let cool at least 30 minutes, then chill in the refrigerator for at least 2 hours. Enjoy!
