Amanda Fit Life helps us skip the store bought muffins and make our own with Zevia Ginger Ale!
Ingredients
- 1 tbsp coconut oil (melted) 1 cup almond flour
- 1/4 cup date sugar
- 1/4 tsp pink Himalayan sea salt
- 1/2 tbsp baking powder
- 1/4 cup apple cider
- 1/4 cup Zevia Ginger Ale
- 3/4 cup unsweetened vanilla almond milk
- 1 apple
- 1 egg
- 1 tsp vanilla extract
- handful almonds
- dash of cinnamon
- dash of ginger
Directions
- Preheat oven to 425°F
- Grease a mini cupcake pan with coconut oil or line with cupcake papers
- Combine almond flour, date sugar, sea salt, and baking powder in a bowl
- Chop the apple and saute in a pan. Set aside and let cool
- In a separate bowl, mix together apple cider, Zevia Ginger Ale, almond milk, egg, and vanilla extract with a hand mixer
- Combine liquid and dry ingredients and whisk until combined
- Add in sauteed apples and walnut pieces and mix
- Fill muffin slots 2/3 full
- Top with more walnut pieces and a dash of date sugar
- Bake for 15-20 mins or until golden brown
