Ingredients

Zevia Mango Ginger Energy Dressing

  • 1/2 cup fresh mango
  • 1 tsp chili sauce
  • 2 tsp water
  • 3 tsp sesame oil
  • 1/2 tsp fresh ginger
  • 2 tbsp Zevia Mango Ginger Energy

Soba Noodle Salad

  • 3/4 cup cooked soba noodle
  • 1 zucchini
  • 1 tbsp sesame seed
  • 1 avocado (sliced)
  • 1 carrot (shredded)
  • 3 tbsp unsalted peanuts (crushed)
  • cilantro (for garnish)

Directions

Zevia Mango Ginger Energy Dressing

  1. Blend together mango, chili sauce, water, sesame oil, ginger, and Mango Ginger Energy in a food processor until smooth
  2. Set dressing side in a small container

Soba Noodle Salad

  1. Rise cooked soba noodles under cold water in a strainer
  2. Spiralize zucchini and sauté for roughly 3 minutes
  3. Split up the soba noodles, zoodles, sesame seeds, avocado, carrots, and peanuts in two separate bowls
  4. Add dressing as desired and enjoy
