Salvage those old bananas with this super easy solution from our friend Leah's Plate!
Ingredients
- 1 1/2 cups + 2 tbsp gluten-free all-purpose flour
- 1 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp pink sea salt
- 1/2 tsp cinnamon
- 1 1/4 cups vegetable oil
- Stevia equivalent to 1 1/4 cups sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 large mashed bananas
- 1/2 cup Zevia Cola
- 1/2 cup Lily's Stevia Sweetened dark chocolate chips
Directions
- Preheat oven to 300°F Grease a loaf pan with coconut oil|In a bowl, combine flour, baking soda, baking powder, sea salt, and cinnamon and mix
- In another bowl, combine vegetable oil, stevia, eggs, vanilla extract, and bananas and mix
- Add half of the dry mixture into the wet mixture and mix
- Add Zevia Cola and remaining flour mixture and mix
- Stir in dark chocolate chips
- Pour mixture into the loaf pan and bake for 70-75 mins or until toothpick test comes out clean
