Cherry Cola Meatballs

Meatballs are great for many occasions, whether it's a a party appetizer or just a personal snack or meal. Instead of buying frozen meatballs with sugary BBQ sauce, whip up these turkey meatballs made with a sugar free Zevia Cherry Cola glaze from our friend Salt and Lavender.

Ingredients

Meatballs

  • 3 slices whole wheat bread
  • 1/2 cup skim milk
  • 3/4 pound lean ground turkey
  • 1 tsp dried aregano
  • 4 cloves garlic (minced)
  • 1/2 small onion (grated)
  • 1 egg
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 tsp salt
  • pepper, to taste

Cherry Cola Glaze

  • 1 can Zevia Cherry Cola
  • 1.5 tbsp cornstarch
  • 1 tbsp tomato paste

Directions

Meatballs 

  1. Preheat oven to 375°F and move rack to the middle. Line a baking sheet with foil and grease lightly.
  2. Tear the bread into small pieces and add to a large bowl. Stir in the milk until bread is soaked.
  3. With a fork, mash the bread until it forms a paste. Add in the remaining meatball ingredients and mix by hand.
  4. Form 1 inch balls and add them to the prepared baking sheet. Bake the meatballs for 15-20 minutes or until cooked throughout.
  5. While the meatballs are baking, begin to make the glaze.

 Cherry Cola Glaze

  1. Whisk together the Zevia Cherry Cola, cornstarch, and tomato paste in a small saucepan.
  2. Cook over medium-high heat until thick enough to coat the back of a spoon (about 10 minutes).
  3. When meatballs are done, insert cocktail picks into each one and dip in the glaze. Enjoy!
