Blueberry Cream Soda Pancakes

There's nothing better than made from scratch pancakes in the morning. Most recipes contain sugar or other alternatives that have the same effects as sugar. Instead, treat yourself with none of the sugar and guilt with these super easy blueberry pancakes from Joyfully Mad.

Ingredients

Blueberry Cream Soda Pancakes

  • 1 1/2 cups all purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp unsalted butter (melted)
  • 1 1/4 cup Zevia Cream Soda
  • 1 egg
  • 1/2 cup blueberries
  • 2 tbsp unsalted butter

Blueberry Whipped Cream 

  • 1 cup heavy whipping cream
  • liquid stevia equivalent to 1 tbsp sugar

Directions

Blueberry Cream Soda Pancakes 

  1. In a large mixing bowl, whisk together flour, baking powder, and salt.
  2.  Add in melted butter, egg, and Zevia Cream Soda. Whisk until fully combined and let rest for 5 minutes. 
  3. Preheat a skillet over medium-high heat. Add butter and let melt. 
  4. Pour batter into skillet 1/4 cup at a time. Add a few blueberries to each pancake and let cook for 3 minutes (until small bubbles form).
  5.  Flip pancakes and cook until completely golden (about 2-3 minutes).
  6.  Add more butter as necessary to keep batter from sticking.
  7.  Serve with blueberry whipped cream. Enjoy! 

Blueberry Whipped Cream 

  1. Using a stand or handheld mixer, whisk heavy whipping cream on high until stiff peaks form (roughly 5 minutes)
  2.  Add in stevia and whisk for another 30 seconds. Enjoy!
