Fruity Punch Oat Waffles

A perfect recipe for when you're looking for a fun way to add a splash of fruit punch flavor, without adding sugar. These Fruity Punch Oat Waffles can be a perfect better-for-you breakfast, snack, post-workout, and dessert! 

 

 

Ingredients

  • 2 cups of Zevia Fruit Punch Soda (bubbles settled) 
  • 2 ripe bananas (mashed up) 
  • 1 and 1/2 cups oats 
  • 2 tsp baking powder 
  • 1/4 tsp sea salt 
  • 2 eggs 
  • Additional: Non-stick cooking spray, toppings of choice (for example: plain yogurt, fresh fruit)

Directions

  1. In a large mixing bowl, combine all ingredients. except for Zevia Soda.
  2. Mix well to combine. Then, slowly add Zevia Fruit Punch to the bowl, and slowly mix to incorporate.
  3. Allow batter to sit for a few minutes, while you prep your waffle iron. Tip: heat up and spray both sides with non-stick cooking spray.
  4. Pour batter into the heated waffle iron, close the lid and cook.
  5. After a few minutes/once done, carefully remove the waffle from maker, and place on a plate. Cover to keep warm.
  6. Continue this process until all batter is used up.
  7. Top with yogurt, fresh fruit, or other toppings as desired and enjoy immediately.
  8. Alternatively you can freeze for later: simply allow waffles to cool completely, Then store in an airtight container in the freezer. When ready to enjoy, simply pop in the toaster to reheat and enjoy!
