Crock-Pot Root Beer Barbeque Chicken

Ingredients

  • 2-2 1/2 lbs. boneless skinless chicken thighs
  • 1 1/2 cups Zevia Creamy Root Beer 
  • 1 1/2 cups of your favorite low sugar barbecue sauce
  • 1 TSP kosher salt 
  • 1/2 TSP black pepper
  • 1 TSP garlic powder 
  • 1 TSP onion powder 
  • 1 TSP smoked paprika 
  • 9 oz. package of slaw mix 
  • 1 cup chopped mango
  • 3 green onions chopped 
  • 2 stalks celery chopped 
  • 1/4 cup cilantro minced
  • 1/4 extra virgin olive oil
  • 3 TBSP white wine vinegar 
  • Juice of 1 large lime
  • 1 tsp salt 
  • Pepper to taste 

Directions

  1. Spray crockpot with cooking spray. 
  2. Trim chicken thighs of extra fat and lay them in a single layer within the crockpot. Combine the spices and sprinkle over the top of the chicken.
  3.  Mix the Zevia Creamy Root Beer and low-sugar barbecue sauce in separate bowl then pour over the chicken, ensuring that the chicken is coated evenly. 
  4. Cover and cook chicken on low for 6 hours, until the chicken, is tender and cooked through; remove the chicken to a plate and shred with two forks. 
  5. Return the chicken to the crockpot and place it on warm while you prepare the crunchy slaw. 
  6. Add the packet of slaw mix, mango, green onions, celery, cilantro, and combine.
  7. Using a separate bowl, whisk together olive oil, white wine vinegar, lime juice, salt, and pepper. Pour mixture into the vegetable mix and toss. 
  8. Prepare your favorite buns, top with the low sugar barbeque chicken, and finish with fresh slaw.  For a gluten-free option, serve over grilled sweet potatoes or rice!
